Foin de Crau is the only hay in the world to hold AOC status (Appellation d'Origine Contrôlée)—the same distinction reserved for Champagne, Roquefort, and Bordeaux wines. Long before modern nutritional science, medieval monks cultivated a remarkable legume they called sainfoin—literally "holy hay" in Old French. For centuries, European horse guardians preferred sainfoin above all other forages. Breeding farms, cavalry regiments, and coaching stables considered it essential for horses required to perform at their peak over long careers. Then, in the late 20th century, sainfoin nearly disappeared.
